Simply Nigella episode 2

Nigella continues to show us that what and how we cook really can make us feel better and more alive with the second episode in her latest series.

In this episode of "Simply Nigella", Nigella introduces her favourite recipes for sharing with family and friends. Whether it is a tray of nourishing breakfast bars for those mornings you need to grab and go, a supper of crunchy chicken cutlets that are just as much fun in the making as in the eating, or Nigella's latest addition to her Chocolate Cake Hall of Fame - her stunning dark and sumptuous chocolate cake - every recipe is a guaranteed crowd-pleaser.

 


There is a pork bun feast too. First inspired by a visit to a New York eatery, Nigella's succulent belly pork burgers - with their array of condiments and picky bits - are now a favourite DIY lunch when the hordes descend.

 1. Breakfast bars

This is my new, improved breakfast bar recipe: gluten-free, dairy-free and enough seeds to make you start sprouting. I’ve used no sugar, but before you start thinking this is virtuously sugar-free (which I could claim it to be), remember that the sweetness that comes from the dates is, in essence, sugar, though certainly it’s unprocessed and full of fibre at the same time.

 

 

 2. Crunchy chicken cutlets

I could have called them Cornflake-Crunchy Chicken Cutlets as the crisp coating is provided not by breadcrumbs, but by cornflakes.

Each breast provides a generously portioned escalope, and all I’d suggest you’d eat alongside is a handful of rocket, dotted with some halved cherry tomatoes, dressed simply.

 

 3. Dark and sumptuous chocolate cake

I never thought I would be in raptures about the joyfulness of a vegan chocolate cake. It’s true that I first made a version of it – the recipe kindly given to me by Caroline Stearns, my technical guru in the kitchen – when I was giving a supper for a vegan friend, but I now make this as my chocolate cake of choice, and I don’t even need to explain it’s vegan. On top of everything else, it’s incredibly simple to make.
