Nigella Lawson serves up five more irresistibly easy dishes, recipes which combine the comfort of the familiar and the exuberance of the new.



Nigella rustles up her favourite weekend breakfast special, wonderfully light surefire-success waffles. She shares her go-to recipes for laid back entertaining: beef and aubergine fatteh, accompanied by bulgur wheat with flaked almonds and nigella seeds. That's followed by passion fruit ice cream cake, which is a dream to eat and a doddle to make. And late night inspiration comes in the form of a toasted brie, parma ham and fig sandwich.

 1. Waffles

I tried to prevent myself getting a waffle iron; I’d made that mistake once before. Reader, I didn’t succeed. But I vowed that this time I wouldn’t use it once then consign it to a cupboard under the stairs, and I’ve been as good as my word and have turned into something of a weekend waffler.

2. Beef and aubergine fatteh

This is a subtly textured, richly flavoured arrangement of toasted pieces of flatbread topped with meaty aubergine and beef, a garlicky tahini-yoghurt sauce, red pepper flakes, pomegranate seeds, toasted pine nuts and fresh shredded mint. Is it too terrible to say that I think of it as Middle-Eastern nachos?

 3. Passion fruit ice cream cake with coconut-caramel sauce

A dream to eat, and a doddle to make. Ever since i made my first pavlova, i’ve been utterly sold on the combination – smooth, chewy, sour-sweet and fragrant – of cream, meringue and passion fruit. And to turn these ingredients into a coolly elegant ice cream cake, you need do nothing more than stir them all together and leave to set in the freezer overnight.
