A vegetarian lasagne filled with flavour and oozy goodness. Serve with garlic bread or a simple green salad. Layers of lasagne, aubergine (melanzane in Italian), savoury béchamel and tomato and basil sauce – this must be one of my favourite dishes for preparing ahead. Delicious served on its own or with chunks of garlic bread.

Combine the flavours of fish pie and cauliflower cheese and you get this wonderful dish ! Think of fish pie and cauliflower cheese and combine the two – delicious! Using a very simple sauce consisting of thickened cream, with the cheese layered into the dish, means it’s quick to prepare, too. It makes a comforting meal in itself, though you could serve it with warm crusty bread, if you like.
